Mix everything togther in the instant pot except the maple syrup (or other sweetner) and optional ingredients.
Seal the instant pot according to manufacturer's instructions, and cook on high pressure for 10 minutes (it will take about 5 minutes to come up to pressure and start cooking).
Once completed, let natural release for 12 minutes. For an easy way to keep track of time, leave the "Keep Warm" setting selected when you start cooking. It will count up once cooking is finished so you can easily see how long the oats have been resting.
Manually release the pressure the rest of the way, and remove the lid.
Stir in your sweetener of choice, add in a few hemp hearts or nuts if desired, and serve!
This is also delicious topped with just a little cream or half and half :)
